I cerainly agree with:

Eddies Covered Wagon - McAllen

My first dinner date in high school was there...all the fried chicken, shrimp and fish you could eat!

Also...

The Palms Drive in...many dates in high school at the Palms now the location of Milam Elementary School in McAllen. $1 per carload...great for double dating.

Wow, so many places on this list that I actually have been too.

Some places I miss:

Sheraton Fairway in McAllen, great buffet and nifty bar.

Ditto for Cuevas, what was the big deal there, SuperTaco or something?

Jetty's Restaurant in Isla Blanca Park.

The original Broadway Hardware/Womeldorfs/Ken's Man Shop/Barrera's Hardware.

All the Palmetto Inn's, especially the one on the Island.

The Cattle Baron in Edinburg, although it may still be there, but it is not in the same form that it once was.

In Mexico:
The Drive Inn in Matamoros, the king of fine dining in Mexico.

The U.S. Bar in Matamoros, coldest beer, saltiest shrimp and best onion rings I have ever experienced.

Trevinios and the real Imperial in Reynosa.

And last but not absolutely not least Eddie's Night Club in Reynosa.

Going from east to west

Bermuda's on SPI

The original Wind Jammer in Port Mansfield.

The old Ft. Brown in Brownsville.

The old filling station near Oklahoma Rd in Olmito, they has some killer off the hook BBQ and Tacos. It was originally a stage stop on the Brownsville to Alice route, and it had the largest beer can collection in the Valley that I ever saw.

Savage's Fruit Stands, in Raymondville and on the 83/100 intersection in or near Rangerville, great BBQ and good fruit stuff.

Richards Sun Valley Inn in Harlingen, best gringo breakfast south of San Antonio.

Can't remember the name of the place, but a really cool little diner in La Feria.

Only open for a few years, but the Lost Trawler in Weslaco was really good, a virtual copy of the King's Inn. Supposedly opened by a long time employee of the KI, that came home to care for aging parents.

That Cajun restruant/beer joint in Donna.

Lackey's bird farm in PSJA, one of those cities. Neat place back in the day, like going to a bird zoo.

Kean's Deli in McAllen.

The old beer shop/ice house across from the big bank in McAllen. I think it was originally called the Ice House, then Pop-a-Top and then maybe something else. But the original one had really good cold cheap beer.

The original Johnny's Mexican food and cheap ugly jewelry shop in South McAllen. Great variation of Tex-Mex food, ala carte.

Las Cazuelas in Edinburg. Maybe it is still open, just south of the Bert Ogden dealership.

Butch's BBQ between Palmview and La Joya. Best BBQ in the Valley IMO.

Babes by the Bay. There was some conflagration at the end of that place in the late 90's early aughts. With the law involved. I lived across the street from some of the dancers and those were some interesting times.

A friend of mine took several of the dancers offshore one time for what was supposedly a fishing trip. This was before cell phone cameras, but the polaroids were epic, that deal finalized his divorce.

The building that Babes was in has a checkered history. I want to say it was The Super Sub Movie Pub and Tequila Frogs and some other odd incarnations. Maybe the short lived Ruddy Duck. I want to say that one of the owners of one of those places was a feature dude on Americas Most Wanted and was caught after living on the Island for about 10 years under an assumed identity.

For decades the Island attracted some real characters.
