For the record Hebert's is originally from Maurice, LA from the heart of Acadiana. Almost all of their product is still made there and shipped into Houston so Schmellba is both wrong and right. It is readily available in Houston, but it's from South Louisiana, sooo, kinda the same as ordering from South LA.

I'm no coon ass, but it's my experience that the stuff that's vacuum packed isn't nearly as good as the stuff you get fresh in the meat markets. Of course, it's that way for any kind of sausage really. I guess more preservatives in the vacuum packed stuff.

I recall Central Market in Lake Charles has fresh boudin in the butcher case. We don't shop central market here in Houston so idk if they have it here... But it was quite good the one time I had it.

Go to Burt's Meat Mkt on Lyons. They have several kinds of boudain behind the glass & they go through a lot. They have both loose and in casing. The place might remind you of places in So LA. They have wonderful lunch food to go as well (gumbo, peach cobbler, beef tips, fried pork chops, greens etc.)

La Boucherie on 1960 sells it, no idea if it's any good though.

Burts in a bears are at least two here in town that have very good Boudin, so I'm not one that thinks it's only good if from South Louisiana.

But based on your comments about Holmes and DJs being good, it looks like you just have bad taste in this particular food.

I grew up about 6 blocks from Judice's. That store is great.

Very true.......boudin alone was to dry. I prefer Bellville Meat Market when I can't make a trip to Scott to Best Stop.

French Fry House near Hobby Airport mentioned in today's Chronicle. Looking online they have boudin egg rolls, pics looks like a real gut bomb

By the way, the Czechs make something similar to boudin called jiternice, but instead of rice we put barley as the grain in there. I've got some in my freezer some guys I know make. My uncle used to make the best.
