The Reserve at Lake Travis (Riverbend Club Lodge) is the only one I've been to for a volleyball team party. The bar was good and the pool kept the girls busy. You need to get out on the lake if you're going to Travis. I don't know any rental places in that area though.
The best is Miraval. Its amazing and fits what you're looking for.
If that's too much, the Lakeway Resort is nice, but you'd have to drive somewhere to go hiking.
If you are willing to get off of LT, the Lake Austin Spa is generally regarded as one of the best in the US.
