And find Gruyre cheese for the top, don't settle for generic swiss or whatever. Cheapest place I've found for a big block is Sam's Club.
Panera's onion soup is just a packet of cheese to be sprinkled on, not a big baked chunk of cheese like what onion soup is supposed to have.UmustBKidding said:

Soup came out pretty good. I used sweet onions and it came out too sweet. Next time I think I'll use mostly yellow onions. Maybe a bit less balsamic vinegar too. But very good recipe!
