I need to thin out our squirrel population and want to try something other than squirrel stew. I have found several fried squirrel recipes, but I have never done that since I thought it would be too dry. Found a squirrel gumbo that I will try. I am interested in other's recipes if anyone is offering. TIA.

Look up dove recipes for stew or smothered. Substitute squirrel for dove.

Pick your favorite pork or rabbit seasoning or marinade. Put on your grill away from the main heat and cook till 145F. It won't take long. Maybe a beer.

It's been a while but the dad of my college girlfriend made a stew/soup that was essentially potato soup with squirrel in it. Either I was really hungry or he nailed it.

I grilled some hot and fast over mesquite coals at the deer lease a couple of years ago and it was good.

I stuffed some with boudin, wrapped them in bacon and smoked them. Was awesome

O.K....so if the EndTimes are closing fast, can someone recommend good YouTube tutorials for skinning squirrel and rabbit?

Squirrels are just one thing I can't get in to eating. Oddly I like chicken fried cottontail and would assume they would be similar. But no. Chicken fried squirrel is like eating chunks of tractor tire. Squirrel and dumplings is not much better. Squirrel stew or gumbo is the only way it's palatable to me.

If it's a young squirrel, absolutely. Older ones require considerably more cooking, to be chewable.

It's not bad when you're poor or the end of the world has arrived and you ran out of cats and dogs.

You can cook them like you do the sky cockroach we call dove. Stuff it with cheese, jalapenos that stifle your tastebuds, and wrap it with bacon.

No one likes either of these. They like cheese, jalapenos, and bacon.

Might as well get a possum and mix the possum and squirrel with some pork and make some burgers….

I went hunting with some folks in Louisiana years ago and those coonasses would always say, "Put enough gravy on anything and it will taste pretty good." Those guys would eat anything.

boil the meat until it picks off the bone. Whip up some mashed potatoes while thats going on.

then mix the shredded squirrel with taters half and half and flatten into a patty.

coat with your favorite breading and fry you up some fritters.

3-6 squirrels
flour
oil
salt
pepper
bacon
onion
chicken stock
bread

Clean and dress the squirrels
Cut into quarters, season with salt and pepper
dredge in flour
put 1/2 cup in a deep skillet or dutch oven, heat
when oil is hot, add squirrel quarters, in batches of 2, to sear
place chopped onion in oil, cook
add back seared squirrel quarters
cover with chicken stock
bring to boil and reduce to simmer

while squirrel stew is simmering, fry up 8 pieces of bacon
toast the bread
put the bacon on the bread
eat the bacon sandwich
forget about the squirrels

Take 1-2 squirrel quarters, add a wedge of potato, some onion, a pat of butter, wrap in foil and toss in the campfire for 30 min or so. Salt and pepper to taste.

I put mine in a crock pot to start, until the meat falls off the bone. Sometimes I've left it in the crock pot for 8-12 hours with beef stock.

The MeatEater buffalo squirrel legs are what I immediately thought of when I saw this thread, but I haven't tried it yet, so didn't suggest it.
I haven't eaten squirrel in 30+ years, but I certainly will if I ever get around to squirrel hunting again!
