I use Slap Ya Mamma (using tonight on a smoked chicken). We have some good friends from Villa Platte where it originated. They were looking for someone to do distribution in Texas, Oklahoma, and New Mexico earlier on and got them in contact with a mutual friend. He loved the taste but thought the name wouldn't go over well, whoops.

I've always been a Best Stop guy, how is the Katy location? Just as good as the one in LA?

My wife swung by Best stop a few months ago and came home with some cracklins and crawfish etouffee...man that hit the spot!

Store is fine, no real huge difference in offerings but location sucks for traffic. Sharing a shopping center and street with In-n-Out burger makes it a nightmare unless you go during off hours of traffic like 10-11am / 2-3pm.

I like to make my own. I just eyeball, but these are pretty close approximations
1/4 cup Diamond kosher salt
1 Tbls Fresh ground black pepper
1 Tbls Paprika
2 tsp Smoked paprika
2 tsp garlic powder
2 tsp onion powder
1 tsp ground oregano
1 tsp ground thyme
1-4 tsp cayenne

I'm getting most of my spices on Amazon from The Spice Way brand. They are high quality and a decent price. Buying good Paprika makes a Huuuuuge difference in rubs, seasoning mixes, and recipes

The Katy location is great. As the other poster mentioned it isn't in the best spot but I just enjoy having great cajun food I can pick up on the way out of town. I bought some boudin stuffed chicken thighs I will be trying on Friday night.

Best Stop on 146, just south of 10 is almost open in Baytown/Mont Belvieu.

I do the same except I'm using the ratios from Emeril's Essence Creole Seasoning recipe. The garlic, oregano, and thyme are all substantially higher proportions of the whole at the expense of salt and black pepper.

Since it's obvious none of you know the best one I'll go ahead and add it to the thread. Joe's Hot Stuff or Joe's Stuff if you like less heat. It's all I use for Cajun cooking. Will change your life.

For salty seasoning like Tony's I like Peto's seasoning. Great for fish dredge.

yeah cajun comes from Acadiana, which is NOT new orleans.

if you're from around Lafayette, Houma, Thibodaux, New Iberia, Breaux Bridge, Opelousas, etc. you know real cajun.

Yea, I was oilfield and occasionally ran across a Cajun crew or hand. Remember a Halliburton supervisor named Hebert.

A little personal story about Cajun folk and a Cajun couple in particular. Back before, when the current Mz Rattler of 30 years was an unknown to me as a person, a gal I was dating and I ran around with a couple that she worked with and they had friends in "cajun" LA. Said friends came over for the annual Crawfish fest at Medina Lake and they happened to own a crawfish business and provided the mudbugs. After it was over we all went down to Produce Row in SA to eat at La Margaritas. Then CJ happened to mention having to get a hotel for him and Eunice. I was living in an apartment at the time and told them oh hell no. You guys can have my apartment for the night and I'll stay with Loretta. We went by the apt and got them settled in and the next morning I went back to the apt and they had already left and left a freezer near full of crawfish with a note that said "Not too often you meet a stranger that in a short time becomes a good friend that will turn his house over to you for the night. If you're ever in Breaux Bridge you always got a place to stay." Fast forward about 6 years and I was there on business and looked them up. Drove out to their place unannounced and as I was walking up Eunice came out and hollered "CJ come look who's here." I said I'm surprised you remember me. CJ said "We been keepin up on you. You and Lorretta broke up and you done married a pretty little gal named Susie....you gonna stay the night?"

Cajun roughnecks the worse to work with. I think they hate themselves and that nasty azz chicory coffee needs to be returned to the septic treatment plant where it came from.

Now I do have some Cajun friends from around Breaux Bridge that are great folks and hosts.
