Cooked some beef "dino bones" ribs today on the pellet grill

Decided with the nice weather this weekend I would fire up the pellet grill and cook some beef ribs I picked up at HEB a while back.

Thawed them out Saturday - seasoned with salt, pepper and some HEB brisket seasoning. Let them sit in the fridge overnight.

Here's my fancy pellet grill - made by Char Griller. Picked it up at HEB 4 years ago for around $300. The controller is pretty good - holds the the temp +/- 5 degrees on a sunny day.



Got the grill going and put the ribs on at 9:45am Sunday morning. Decided to try some pecan pellets today. Bluetooth thermometer all set - One probe in the ribs, the other watching the grill temp (Don't have one of those fancy wifi/wireless grills...) Set the grill thermostat to 250 degrees - here we go!



Once things got warmed up decided to add the smoke tube



Checking it every hour or so... cooking good....Look at those bones!....The pic below was right before they hit 190 degrees internal.



Pulled the ribs when they hit 190 degrees, wrapped in foil and returned to the grill until they reached 205 degrees.



Once they hit 205 degrees, pulled off the grill and let them rest for an hour and a half.

Summary of the timing to cook.
The package of ribs was a little over 5-1/2 pounds.
Cooked for close to 6-1/2 hours at 250 degrees. (ribs were at "refrigerator" temperature)
Wrapped when the internal temp was 190 degrees (around 5 hours)
They stalled for a while around 170 degrees - interesting to watch.
Cooked for another hour and a half (wrapped) until internal temp was 205 degrees.
Removed from the grill and rested another hour and a half before eating.

How did they turn out?



Very moist/juicy.... The taste/texture is more like brisket than steak. Brisket on a stick!



They didn't last long... Family destroyed them.... Got some scraps off the bones to mix in eggs for breakfast tacos this week.

Man, those look good. I've been smoking pork butts as practice before brisket. Beef ribs might be a good next step before buying a big ol brisket.

Fair question.
Pellet grill doesn't generate smoke like a stick burner (at least with my poor boy model). The feed system on a pellet grill is pretty efficient. I can dial it in to smoke more but get bigger temp swings on the cooking. I've found that using the smoke tube helps w the flavor/smoke ring while allowing me to keep better control on the temperature.

What brand of smoke tube? Did it last the entire time or have to refill?

Found it on Amazon. It will smoke for 4-1/2 hours +/-.

Burn pot and pellets = very efficient burn and clean smoke.

When smoking meat, you actually want a little bit of dirty smoke. That's the flavor. Pellet grills are a perfect example of using technology to get a "perfect" smoking method when in actuality, it's the imperfection of burning wood that makes it great. Thus a smoke tube allows for a less efficient burn on pellets, producing dirty smoke and actually achieving something closer to what a real wood fire produces.

Don't get me wrong, I love my pellet smoker.

What I've done in the past is set it to Max smoke setting for 1 hour and just let it smoke the meat then we crank up temp to 250 and cook you will get amazing smoke flavour and ring this way.
