Anyone have a line on plate ribs in the northern half of DFW? Costco used to be my go to but I haven't seen them there in months.

This isnt what you asked for, but I always have to order mine online from somewhere like 44 farms

But I live out of state and finding those type of cuts are impossible

Wild Fork (frozen online meat store) I think Carrie's them and has a B&M location in Frisco

They had them at the costco on Richmond at Wesleyan in Houston on Monday. Balked at the price and went with pork ribs.

They were sold out for a while, but just earlier this week I saw they had some back in stock.

If you are asking for uncut short ribs, you need to ask the butcher. He sold me a couple from the cooler. I got some for the bama game this year and made the claim they were elephant baby back ribs. Now I have to do it every year

Not sure if they are actually plate ribs, which is what I was asking for, but it worked

Edit ** Ok, checked the interwebs and uncut short ribs are "plate ribs"

Yea I've asked at CM before and butcher kept trying to give me short ribs. Didn't understand plate was different.

Did see some back ribs at Southlake Costco many months ago and they are darn good but not near as meaty.

So I had the same conversation with my CM butcher. He didn't call them plate ribs.

There are essentially three types of beef ribs:
  • Plate Short Ribs (most commonly called beef short ribs.)
  • Chuck Short Ribs
  • Back Ribs.

Based on this, he sold me what I was asking for which are uncut short ribs. They were really good, but pricey. two 3-bone plates were somewhere around $100.

I really wanted some beef back ribs.....since they are a lot less expensive, they advertise them occasionally, but I couldn't find any around me anywhere. Tom Thumb, Kroger, Whole foods...........nada.

Costco. If not there, Market Street has them. You have to ask for the uncut plate ribs and specify 3 or 4 rib bones. I done this successfully in both locations in Frisco: El Dorado and the one on Legacy/Lebanon.

The truly big "dino beef ribs" are cut 123A. There are usually 3 bones in them and they are huge. Commonly referred to as plate ribs and a lot of the popular bbq restaurants across the state will sell them now.

The chuck ribs are still big as well, just not quite as big as the plates, and are commonly called short ribs. They are cut specification 130.

Go to the butcher and tell him the numerical code of what you are wanting and that should be more direct and clear up any confusion on what you are getting.

I'd be careful depending on what you are trying to do, while you technically can smoke beef back ribs, there isnt a ton of meat on them, usually people do them in a crockpot and braise them. For that reason I've never messed with them and always stuck with the plate and short ribs.

I'm not in dfw, so I don't know the lay of the land there. But if you have any Asian/Korean markets, check there.
The H-mart and 99mart(korean grocery stores) in Houston usually have beef ribs in stock.

Need to double check the H Mart.

Since chuck shorts are more readily available most stores cut those for kalbi or in the case of Fiesta, tablitas.

Costco and the Asian stores are also great for pork belly.

The H-Mart in Plano at Parker and K has every cut of just about everything. I haven't seen any beef ribs that weren't already cut thin though. You could ask if they have them on hand in the vac bag.

The Costco half a mile around the corner on 75 has had them pretty consistently here recently.

This is correct. it was probably over $10/lb. CM isn't bargain shopping. It was really good.

Everywhere I've seen "dino ribs" or plate ribs, they are ~$9/lb, ~$50-60 per rack. (In Austin)
