Custom Smoker Question

I am sure this topic has been asked numerous times but I am building a new outdoor kitchen. I want a good offset smoker to build into it. Budget isn't a big deal, basically probably up to $10K. I want one large enough to do a small hog on if possible. (I'm guessing cooking chamber at least 48" long). Most online that large come on a trailer but from what I can gather, most fabricators will leave it off the trailer if mounting into a kitchen.

I have looked at a few online (lang, gatorpit, ...) but figured Id ask the board which they would purchase if no budget. I live in UT so Ill have to have it shipped, but I wont have to pay taxes so pretty much a wash in cost.

Moberg is considered to be the gold standard by most, but you will pay for it and his lead time is like 2 years.

The one downside to a built in smoker would be the inability to move your firebox out of direct wind flow. If the wind is blowing into your firebox it will be almost impossible to keep temps down. Just something to consider if you haven't already.

I built one in using pavers. Custom smoker by the pit man.

If I was building one into a kitchen I'd build one out of stone and firebrick and build it as big as I wanted. It would be a fraction of the price and wayyy more insulated and if designed right more efficient than a metal smoker.

Depending on the size you're looking for I may be able to help you out. Not gonna get into a dick measuring contest on whose gold standard or the best or whatever, but our work speaks for itself.

You might be surprised, we're competitive with the other builders considering what you get from us. Send me some ideas, I'd love to build all the metal components for a brick pit if you go that route. I love brick pits, I think they're so cool.

Nothing that a couple of pieces of plywood to act as a windshield can't fix.

Except that plywood will cost twice as much as the pit.
