Not the exact same question, but pretty closely related thread. Several recommended bumping the budget to around 1k.

I'd be interested to know the difference in o/u for each of these applications and why

That could be a long answer but I'll risk the OB judgement to make some generalizations.

Of course one gun could be good all around but trap and skeet especially can benefit from things that don't necessarily translate to being a good field gun. Clays and hunting is pretty close.

I've heard and try to practice using the sporting guns during spring summer because even though skeet may not be a good representation of birds it's fun to break a lot of them. As fall gets closer then get out your field gun and hit the clays.

Hunting- usually lighter, shorter barreled, ejectors, auto safety, designed to be "flatter" and a 50/50 shooter from both stock drop and rib geometry, not ported, grip sometimes straight for mount quickness, stock and recoil pad may be slightly smaller for maneuverability, typically less expensive wood.

Sporting- typically heavier to make for a smooth repeatable swing and to handle the higher round counts. Extractors to make it easier to stash your hulls for reloading. More of a pistol grip to the stock for easy redundancy. Sometimes slightly larger stock/recoil pad for mounting redundancy and because quick mounting not an issue. Sometimes manual safeties because you keep it open when not shooting and because you don't want to be charged for miss because you forgot. Portings ok since you prob won't drop it in the mud and clog them up. Sometimes larger rib and mid rib sights for consistency when you have time to mount. Trap is really a specialty that might be better served by Google but in general the raised rib and various rib geometries designed to make the gun hit high.

The best is the one you shoot the best. I'm an O/U guy. Take mine to the goose pit, duck slough, grouse ridge and quail brush. I have loved my Browning Citorti for years.

Inherited, kind of, a Beretta silver pigeon in a 28 gauge. I'd shot other Berettas. Didn't like them. This one, for whatever reason, I'm deadly with. I don't know if Ron, the man that the shotgun came from, is helping me from the grave, or what. I've killed 3 for 3 Tom turkeys with this 28.

To me the biggest difference between skeet and sporting clays is the setups. In clays you have birds coming at you, going away, down from a tower, crossing, rabbits etc. I've shot with guys that look at every stand and change out chokes based on the setup.

Love mine. That's about as high class as I'll get for a scatter gun. Rifles are a whole other $tory!
