I know it sounds crazy, but a little flour on the bacon the night before helps keep it from curling up too much and cooking unevenly.
Diced Yukon gold potatoes (already boiled for 5 min with a little vinegar/salt) go into the bacon grease.
I roughly cut the bacon with scissors so I don't have to go back inside, then dump them back on with the potatoes, then cover both with egg.
Take all that off when eggs are cooked and throw on the tortillas.
Slapped together with some cheese, avocado, cilantro, and hot sauce:
