Mary's Cafe is my favorite by far. Great fries and gravy as well. Don't eat the salad, it is boring and is a waste of your stomach space. Also, some decent greasy rot gut Mexican food.
Jake and Dorothy's is pretty good if you want to make a quick stop off of 281. Also a dirt cheap breakfast.

I soak meat in milk overnight. Dip the meat in egg, then cover in flour, then cast iron pan with oil. The oil needs to already be hot or the breading will get soggy. Do not cover the egg dipped meat in flour until right before you put it in the pan or it will flake off while cooking. You can season the flour or season directly on top of the chicken fried steak while it is cooking (salt and pepper to taste). If I am wanting something different with spices I sometimes use some cajun spice and cayenne.
Gravy is oil, flour, milk, salt and pepper. Cook slow and work the lumps out constantly.
