Mary's Cafe is my favorite by far. Great fries and gravy as well. Don't eat the salad, it is boring and is a waste of your stomach space. Also, some decent greasy rot gut Mexican food.

Jake and Dorothy's is pretty good if you want to make a quick stop off of 281. Also a dirt cheap breakfast.

I know neither of those answer your question.

I soak meat in milk overnight. Dip the meat in egg, then cover in flour, then cast iron pan with oil. The oil needs to already be hot or the breading will get soggy. Do not cover the egg dipped meat in flour until right before you put it in the pan or it will flake off while cooking. You can season the flour or season directly on top of the chicken fried steak while it is cooking (salt and pepper to taste). If I am wanting something different with spices I sometimes use some cajun spice and cayenne.

Gravy is oil, flour, milk, salt and pepper. Cook slow and work the lumps out constantly.

LuLu's bakery if you're ever in/near downtown San Antonio.

They are open 24 hours and there's a lot of weird **** that walks through the door in the late late hours...

But...pretty good CFS.

ETA: you can also polish off your meal with a 3lb. cinnamon roll.

Funny story. In 2008, my son and I went to a Yankees game since it was the last year they were playing in the old Yankee Stadium. We left NY early Sunday morning, driving through Times Square around 5:00 am on the way to LaGuardia.

We land at DFW around 9:30 or so. We stop at Mary's on the way home in west Texas for lunch. While we are eating our CFS and drinking a Shiner beer, we listened to the adjoining table talking about penning some heifers earlier that morning. Country music was playing on the tv--Merle Haggard I think. We both started laughing thinking what the New Yorkers would be thinking about our day. And how they would think we had landed on Mars instead of a state in the USA. I love Texas!!

This thread inspired me, made some chicken fried venison tonight. Mighty tasty it was, even if I cheated and cheaped out on the gravy.

I make mine different than normal, but no way am I saying on this board how. Not worth it.

El Charro in Tyler has a great CFS

Edit: original has now closed and new one and spill off Gus don't get good reviews but apparently use same receipt for CFS though.

I hesitate to post this because I don't want any more people crowding one of my favorite spots, but... Brotherton's Black Iron BBQ in Pflugerville does a really good CFS in the evenings!

Mary's Cafe in Strawn. Great food all the way around in addition to the CFS.

Anyone remember Mom's in Bryan. It was served family style until they ran out. It was like my grandmother made. Also really great.

To me they both produce different crusts. I like both but grew up with mom cooking in cast iron pan style and she taught my wife how to do it.

Pan fried is 1000% better. Deep fried, at my age, I can pass on usually.

Not that it matters to the discussion at all, but We called deep fried chicken fried steak and the pan fried with just a bottom coating of grease country fried steak.

J Cody's on S College occupies the building that was built by "Tom's". There was another owner of Tom's before Cody that went out of business. Cody has been doing a great job - including CFS - for many years now. I like their CFS.

Buppy's does a great job on CFS and when he was open for lunch I would go there. I don't prefer CFS on a buffet cafeteria or catered. Only cafeteria that ever pulled that off was Luby's on their prime years.

Review: Louisiana Longhorn cafe in Round Rock

Very disappointed. I judge a CFS by being able to cut a piece with just a fork and I could barely get by with a steak knife. Had to wash it down with water. The gravy tasted like it came from a powder. Sides were fine. Presentation good just not a good cut of meat and it was over cooked

Well, that's too bad. It used to be fork tender.

I was reminded earlier of a place I really miss. Mel's in Giddings. CFS and chocolate meringue pie.

Get a rope indeed. But beyond the outrage, how would that even work? Ground beef battered and deep fried? What is holding the meat into pieces?

This is what chicken fried steak is in Utah. It's literally a deep fried hamburger. People out here rave about them. Disgusting.
