I'm not sure if you've had grass fed before, but be aware before you go and buy in bulk that there is a difference in taste. Some people prefer it, some don't. I'd suggest trying it (if you haven't already) before dropping a pretty penny on a bunch of it
A lot depends on how you cook it. If you cook a grass fed steak like you would a grain fed steak, you will likely be disappointed. For grass fed beef, you need to cook it lower and slower.

A few years ago, someone had a taste test of grass fed beef compared to grain fed beef with the beef cooked by experienced chefs and most preferred the grass fed beef.

As a kid, I grew up on grass fed beef. Whenever we'd sell cattle, we'd keep one back and keep on pasture until slaughter weight when we'd take it to the butcher. I still remember going to a steak restaurant in Dalhart that people in the area thought well of. My grain fed steak was hardly edible compared to the grass fed beef I was used to eating.

I do know from having several colleagues visit from overseas is they don't have grain fed beef in Europe. The first thing they always ask for is to go to a nice steak place, because they can't get good tasting beef at home. I always assumed because ours was grain fed but that may or may not be true.

I do know that with the grass fed beef you might need to supplement with beef tallow if you are doing keto.

Buy a cow at the county fair and have it butchered

Can't get much more local than that

There needs to be a LIVESTOCK subcategory on here for those that are interested in, or involved in ranching. I'm raising a small herd of beef cattle, I'd be interested in learning from some of you guys with more experience.

Same is true for pork, lamb, goat, chickens, turkeys, and rabbits! We raise our own grass fed grain finished beef, but we support the youth in our County by purchasing projects at the local county fair every year. As someone else pointed out, can't get more local than that!

Do a forum search with cattle or livestock in the title and you'll pull some good stuff up from the past year, we had a good thread not too long ago about profitability in smaller sized herds that I remember.

Also, if you haven't been yet try to get to the beef cattle short course A&M puts on every year in August. I went a few years back and it's a great wealth of knowledge and they tailor it to where the guy who has never raised cattle before on up to the guy who has been ranching for 50 years, and everyone in between can get something really useful out of it.

Thanks Agfan. I've been reading a lot of good stuff on the TAMU Animal Science website, including some info on the Beef Cattle Short Course. Wish I could go, but I can't miss days of work for that. Maybe one year I'll make it. I know they also host seminars throughout the year on various cattle related topics.

I'm grazing some steers right now but they won't be ready for slaughter for another 6-8 months.

Grain fed rabbit! We use to hunt the rabbits around our silos that would feast on the residual spilled grains, alfalfa pellets, etc. Mighty fine eating!

I grew up with one of the owners of Burgundy Beef. Great folks! Sent their kids to TAMU. For the most part, their beef is primarily Angus (at least 40% Angus genetics) heifers. I know you can purchase from their facility in Grandview and they have a retail shop in the Ft Worth Historical District just off 7th Street near Will Rogers Coliseum. It is pricey. We still prefer our home grown grass fed- grain finished beef that is of Brangus and Brangus cross genetics. Good luck!

If you're in Tarrant County and want to drive and buy where it is raised:

Granola COOP's drive from as far as east of Dallas once a week to buy his stuff. He raised much of his grass fed beef on my place until I bought the place a few years ago from a family that had owned it since the 1880's.

44 Farms is a huge operation. Several thousand head of cattle, sells beef to over 450 restaurants around the country. If you are looking to support a local rancher, there are better options.

Dry CRP Love grass. If you can enjoy your steak after that then you are a true grass feed person!

44 Farms is the largest producer of black angus beef in Texas. Also, they are not selling grass-fed beef. They finish their cattle on grain, just like every other large commercial operation. CEO of 44 Farms is the former president of the Astros, who decided he wanted to be a rancher.

There are alot of good mom and pop cattle operations all over the state, selling top-notch beef. Find one of those.

Check out Coyote Creek Farms. They are outside Elgin but you pick up the meat in Smithville. My parents have bought half a cow (they will throw in the heart, liver, & tongue if you ask) from them twice now and have been very happy with the meat.
