Lots of old retired "char it" farts that grew up being told to worry about getting worms still eat at steakhouses often and skew the data.

I would expect nothing else from Longhorn Steakhouse customers.

I'd be very curious to see the numbers from a higher end joint or people who grill their own at home.

Unfortunately... my family follows the trend. We don't go out to eat steak....I grew up in a beef production family, I age and cut my own steaks for the family and here is the break down.

Me: rare-medium rare
MRS SSA-- medium- medium well
Lil ATM- well done (he is 3, and has a chance)
Baby O - well done (she's only 1 so there's hope)

The good thing is, When I cook a prime rib, they get the end pieces as they are more medium... I get the red center.... heaven.

My Canadian inlaws are more "Texan" that these yobs.
The MIL prefers blue to extremely rare.
The wife is rare to medium rare same as me.
Carpe milkum is too young to express a preference, but always wants the bone so it's rare.

Northern Range folks seem to eat beef much more rare.

But, with that said, the best response I heard for when someone orders a steak over medium is "Would you like chicken or pork?"

Reminds me of my response when asked "Would you like A1/sauce?" My response is always "I hope not!"

There's nothing wrong with a medium well or well done steak -- cooked correctly. Your choices could be a little more limited -- sirloins cooked that way can be a little tough and a little more dry depending on the cook. I only order MW or WD as I don't care for the pink area and certainly not the red area. It isn't a germ thing -- I just don't like it. If you like it, that's fine, but I don't get why people spend a great deal of time and effort worrying about how others cook their steak or what they put on it. My MW strip steak I had last night (that I now wish was WD) got digested in the same exact way it would have had it been medium rare. Is was by no means ruined (although last night's wasn't the places' best effort) and you didn't have to pay for it.

Reminds me of when I was a kid and didn't know any better. Spending the night when a buddy who's family ancestors happen to be some of the earliest ranchers in Texas and they are ranchers and large land owners themselves. His dad cooked us steaks and as he was sliding it across the bar to us I asked if they had any A-1. He slid it back towards him and said if you need that crap on your steak I'll cook you another one. From that day forward I never used it again

a little off topic - we caught redfish last week in SC. The guide was filleting those bad boys. it just looked so good I started eating a filet raw. Not even sure I'll fry one that fresh ever again.

I hope so... I'm a vegetarian and even *I* know that it isn't blood... and that you shouldn't ruin a good steak by cooking it above Medium.

Growing up my family didn't really eat steak. I thought it was for rich people. When I first started eating steak as a early teen with parents approval to order at chilis or wherever, I would get it medium-well. I never used A-1, I always thought it was weird to use steak sauce. As I grew older & wiser I've made my way to rare or medium rare.

While I like how you think, most lawyers bill in .25 hour minimum increments - though a rate for steak eating might be highly negotiable...
