I don't have a spreadsheet but it seems there are plenty of guys on here duck hunting who think ducks are nasty and don't taste good- so what are you guys doing with your birds? Do you have a flyway's worth of birds mounted in your home/office? Do you give them away?

I'm still firmly of the opinion that anybody who says ducks don't taste good simply haven't had them cooked properly. Especially when it comes to puddle ducks. I'll allow that lots of divers and sea ducks will be quite fishy and not taste as good as puddle ducks.

And I've traditionally only cooked spoonies in gumbo but I've had multiple people in the Winnie/Anahuac area swear up & down that the spoonies there are delicious because they feed on the rice there and not the crustaceans on the bottom- they say that the key is to look at the fat, if it's orange then it means they've been eating fish & crustaceans and they go in the gumbo pot but if they have yellow fat it means they've been feeding on rice and will be delicious. They say they slow roast them in their own fat and then shred the meat off, use the drippings to make gravy, and serve it all over rice.

I'm usually the one providing the duck hunt as part of a cast and blast at our place on the coast. When I take friends, normally I set the condition that they will keep all the birds. Otherwise I'd just as soon sleep in and fish. In the past, I've ground birds I didn't want to eat and mixed them with rice and veggies for my dogs.

I assure you I can cook anything properly. If fact, I'd say it's because I'm accomplished cook that makes it even more difficult to eat duck not vice versa. When Pekin duck is the standard your used to, a hunted duck isn't going to measure up well. If my everyday meals came out of a crock pot, a game duck may not bee too terrible in comparison.

I can handle species like Mallards, Woodies, and Teal in limited quantities, but, no way in hell I'm going to ruin a perfectly good pot of gumbo with a diving duck.

I actually do eat a few. Mostly give them away to buddies that I take hunting. And then several end up in the home office.

Besides the mounts, I think my favorite thing about the office is the stone walls. Looks awesome.

Awesome. Definitely envious of the cinnamon. Hell, I'd just take a BWT in full plumage like that.

I have a friend that doesn't clean his dove until he is ready to cook them. I know it has taken hims 6-9 months to clean and cook them. He deep freezes them and thinks that's okay. I've never eaten any of his dove so I'm not sure how they taste.
