A friend wants to give us a bunch of cedar elm for our smoker. I realize that it is in the elm family and not related to cedar or ashe juniper but I have never heard it being used for smoking meats. Friend claims it's good. Any input?
May as well try it, if you don't like it, get rid of it on craigslist as fire wood, or use it yourself for any fires where you aren't trying to smoke. Or see if the friend has anything he's smoked with it that you could taste test.
