I like Leupold and Zeiss, have heard very good comments on Vortex, Nightforce and many other scopes. I do choose scopes that look balanced on each rifle, the exception would be the 20mm tube scope on a dangerous game rifle where other factors are more important than scale.
I do prefer CDS turrets (MOA over load specific) because they are low profile and I shoot multiple loads in each rifle and prefer not to spend money on turret caps.
I am no expert, this is how I would scope these rifles and was only pointing out the lack of information.
700 5R, 308, 24" - Long range hunting, target, VX3 30mm, 4.5x14x40 side focus CDS.
700 SPS, 223 Varmint 20" - Inexpensive rifle, walking varminter, toss up between VX3 2.5x8 CDS or 3.5x10 CDS.
700 SPS 223 Sporter - Inexpensive rifle, walking varminter/deer rifle for stunt shooters like me. VX3 2.5x8 or same in CDS
700 BDL 30-06 - Classic, spit-shined stock, white line spacers and ebony forend, deer/elk, owner buys off the shelf 165gr ammo and rarely takes a shot beyone 250. Vari-X III, 3.5X10 duplex. Just looks at home on this rifle, 3.5x10 over 2.5x8 because longer length is more forgiving on long action.
700 SPS SS 243 Sporter - Long range, all-weather hunting rifle, VX3 3.5x10 CDS pushing 105 Amax on thin skin game.
700 Classic 375 H&H - Dangerous game, fast target acquisition and long eye relief, VX3 1.5x5.

I detest tall turrets on hunting rifles, that is just my opinion. A 3.5x10 CDS would be right at home on top of a VLS 308. I have run 9X to 750 and would have no problem running a 10X to 1000, especially if long range is "for fun".
