My dad is about to purchase one of the two listed above. Both have a 5 1/2" barrel and will have a blued "oil-look" finish with brass trigger guard. Caliber is .357 mag.

My question is, has anybody had the chance to shoot/own either of the two? Which should he get in your opinion.

Not a .357, but I'm very impressed with my cattleman in .45 Colt

Hadn't heard of the patron, so I had to look it up. Basically, it sounds like the cattleman that they actually check the fit the cylinders on (Italians are kind of lax in this area, both Uberti and Pietta) and swap in some higher-grade springs... sounds like they may also have a wider sight groove on the top. If the price wasn't much different and it's really made to run for CAS I'd spring for the el Patron, springs can make a huge difference in trigger feel and action on a SA revolver.

Used to have a .357 Uberti that I wish I had never gotten rid of. Thing I liked about it was the option of plinking with cheaper .38's and the fact that .45 LC ammo isn't cheap

I like the Uberti .357. It is a pretty fun gun to have, but I haven't ever shot the Patron, so I can't make an accurate comparison for you.
