On a recommendation, I recently purchased a bottle of Rebecca Creek Whiskey, which is distilled just north of San Antonio, off of 281. Big thumbs up, and felt like I should share with some folks.

The distillery has only been open for ~2 yrs, and they also produce Enchanted Rock Vodka. I think they are only currently selling around the Hill Country area...SA...Austin...If you see a bottle, pick it up.

They sponsored the Running M tailgate group and sent about a case of each per game for them to get the word out (according to them at turkey day). they said it's pretty good stuff and currently they have a fully stocked deer lease of vodka and whiskey.

will be picking up a bottle when i head to austin friday.

Both the vodka and whiskey should be available at any customer of Republic Beverage Distribution. That should be all Specs as well as many other liquor stores in Texas.

I'll leave my post at that. My uncle is a part owner of RCD, so I'm a little biased.

The whiskey is currently a blend of their own, fairly green product and an 8 year old whiskey from Kentucky. Keep your eyes out in the next two years for their own Reserve, which will be strictly their own product.

Unfortunately, as you seem to know, it takes a while to make a truly nice whiskey. The vodka was a way to get income for the distillery while they perfected their whiskey. It can be distilled and sold immediately. The owners started the distillery because they're whiskey drinkers. They wanted to distill their own, super premium whiskey. Unfortunately that takes a little while.

The guy at the liquor store told me the other day it was pretty good. I went ahead and grabbed my bottle of Woodford, but now I'm tempted to go back and try it.

I'll probably give it a go once they have a "home grown" product, but the lack of temperature variation in Texas worries me a bit. Good whiskey needs to expand and contract in the barrel, and when it is just plain hot 80% of the year, I don't see that happening.

Their warehouse is climate controlled, if that makes a difference.

It smells heavenly in there too.

My neighborhood liquor store in SA has it, he let me have a sample - it's good stuff. I bought a bottle to give away as a Christmas present. Hopefully I'll get one for myself, too.

Enchanted Rock is excellent vodka, comparable or better than Tito's., beats the hell out of GG, etc.

Whiskey has no minimum age. Nor does Bourbon. Straight Bourbon is at least two years old.

someone on luicci's board said it was (at least partly) aggie owned? is that true? i have been unable to confirm.

I'll see what I can find out. My uncle went to Southwest Texas back in the early '80's so that's one part that isn't Aggie owned.

I purchased a bottle before Thanksgiving at Whiskey Charlie's. I went in to get a bottle of Avion Tequila and an Aggie, who worked for Rebecca Creek, was there marketing the product.

It is really good for a blended whiskey. I had 4 shots right after the t.u. game. Really helped out!

Far more important than temperature variation is the quality of water used in the distill - you need to have no iron. Iron ruins whiskey.

Also more important is what the cooper's use for barrel wood and what process they use to fire treat it. All oak isn't the same, and all charring isn't the same. You need to do it just right so that the charring brings out the right sugars in the wood, and you need to start with good stock as the oak is what gives the whiskey/bourbon it's color and flavor.

With modern technology, climate controlled aging houses can make better and more consistent "seasons" in the aging houses, though it's not traditional. But the ingredients and quality of the barrels should be more of a concern than the aging houses.

I am a big fan of the Enchanted Rock vodka. Recently bought the whiskey. My early reviews are good, but not great.

Enchanted Rock is how I survived the Cotton Bowl last year. However I feel like a traitor every time I drink it...being from Dripping Springs. But I am on the hunt for Rebecca Creek...still MIA here in Houston.

I saw it in Lubbock this past weekend.

Seemed a little expensive at $38.99 for a 750ml for something that I haven't ever tasted before.

If I try it and like it, I might pick up a bottle. Until then, I'll stick to my favorites.

I found some at the Specs in MidTown Houston. I believe the price was ~$30 (assuming you pay cash or debit). There were at least 2 or 3 bottles behind the one I grabbed. Not sure if there were more in the back, but I can't imagine they would be sold out.
