I'm getting kind of bored of baked potatoes.

Do any of you guys have a kick-ass side dish vegetable recipe? Something similar to what you'd expect at a fancy steak house?

We really enjoy doing grilled asparagus with our steaks. I coat the asparagus in olive oil and then liberally apply kosher salt and graduated garlic. Grill them until they are as tender as you like.

They are fantastic that way and easy.

Sautéed spinach with a bit if garlic and fresh grated parmesean cheese.

Potatoes au Gratin is another excellent option.

Sautéed broccoli with pesto is good with anything.

agree with all those above on asparagus with steak...

brush with olive oil, sprinkle with garlic powder, salt, black pepper, allow to marinate for a while if you can...

then grill on high for a couple of minutes.

it's about as easy as it gets and it is delicious!

Olive oil, salt and pepper, Parmesan cheese. Heat oven to 350, bake for 10-15 minutes, turning the asparagus after about 8 minutes.

Don't do a ton of salt AND Parmesan. Can get quite salty, we discovered.

Doesn't get much better than baked or mashed. Taters. Use real butter.

If you are grilling the steak, why not just grill the sides too. I grilled up some bone in ribeyes with scrimp and aspergrass tonight. Mmmmm Mmmmm, Good.

Also good are:
squash and zucchini
corn on the cob
avocado on the half shell

For potatos one of the following
Baked potato
French fries
Mashed potato with cream gravy
Field peas and mashed potato (with or without cream gravy)

Other:
If cooking on a stovetop, slice some onions, separate into rings, and toss in with the steak.
Corn on the cob.
Fresh rolls.
Fried okra patties (most people have never even seen these)

For the mashed potatoes, forget mixing in milk and/or cream. Use only real butter instead, the fresher the better. Keep adding room temperature butter and stirring/mashing until you get it just right. This is far superior to using milk. Don't forget to add salt, too.

For the okra patties, slice freshly picked okra into slices about the width of about two to tree nickels. Make a dough with flour, baking powder, salt, and water. Don't get it very watery -- I like it a bit thicker than a pancake mix. Stir the okra slices in with the dough, and fry on a griddle until brown. I usually use a 1/4 cup measuring cup to dip into the batter and then drop onto the griddle to make patties.

I also like a hunk of coarse-ground sausage to go with steak (either Polish sausage or this Argentinian style stuff my inlaws get).

I do have to say, I really like some creamy mashed potatoes with my steak. They soak up the juicy goodness from a med-rare steak quite well.

If you are in a hurry and not looking for style points to go with your steak, buy some frozen hash brown patties and throw them on the grill when you put on the steak.

Quartered red potatoes on a foil lined baking sheet. Drizzle with olive oil. Coat with a little Lawry's or other seasoning of choice AND crushed red pepper flakes. Bake at 350 deg until golden and crispy.

Stove top dutch oven blackeyed peas. I brown bacon first, usually a half package or so. Add chopped jalapenos and chopped white onion and sautee those in the bacon grease for a bit, then add frozen package of blackeyed peas and water and simmer until done. Don't drain any of the bacon grease!

Good old fashioned green beans - heavy on the butter when you boil them, and heavy on the salt pork.

Sauteed okra

Sauteed zuchini ans squash

Grilled corn on the cob

Boiled spinach

Hell, even a simple garden salad is also good

Of course, mashed potatoes, baked potatoes and the standard sides are always good as well. I personally can't stand asparagus, but sautee it with a light coat of olive oil and garlic salt for my wife all the time.

Grilled eggplant. Brush with olive oil and basalmic vinegar, S&P.
