60% pork/40% venison
1 lb salt/60 lbs meat
8 oz. black pepper/100 lbs meat
3 oz. garlic/100 lbs meat
1 oz. cayenne pepper/100 lbs meat

Download the excel spreadsheet on this link....just plug in how many lbs you want and it will calculate all the seasonings.

TripleFour's recipe is identical to the one we use. Cut up meat, pour on seasoning, mix it up, grind through chili plate, mix again, re-grind to fine plate, and stuff, hang, and smoke.

i have used the spreadsheets above and they work great. all the formulas auto adjust to the poundage you are making. great tool

Agreed....that spreadsheet is awesome. Anyone of you OB Ags should certainly take a look....you'll be glad you did.
