What exactly do you plug $400 headphones into?
The same thing you would use $1000 speakers for.
Unless you guys put 128kbps music on your i devices, then your sound quality is completely limited by the crappy earbuds most of you use. The audio circuitry of an iPod is more than good enough to deserve good headphones. I don't know about an iPhone because I don't have one.
I would not buy Bose under any conditions. I don't want to contribute a penny to that company's longevity.
$400 buys really good headphones. If traveling wasn't a concern, I would start my search with Sennheiser and Grado. The problem with traveling is that most of these are open air so they let a lot of sound escape. For use in the home I would normally not want noise cancelling circuitry at all since noise cancelling mucks with the frequency response. The PSB mentioned above has very good reviews - I just haven't heard them.
