You're often better off buying the frozen shrimp and thawing them yourself. A lot of the "fresh" shrimp on the counter was frozen beforehand, and thawed to display. Unless the "fresh, never frozen" shrimp got to the store that day, buy the frozen stuff.

We had a major problem in Alabama/Florida gulf coast where restaurants were hiding the source (or even lying about the source) of their Shrimp.
I generally don't like regulation... but our local shrimpers were dealing with lying retailers and distributors labelling/misrepresenting source. Now if you serve shrimp you have to post if you may be sourcing shrimp from outside of our area. Demand for local shrimp has increased sharply as well - helping local shrimpers.
