As for the new movies, I doubt we see the EU, and if we do they will be reimagined based on some key elements (like Thrawn, or the reborn Emperor, or whatever). The easy answer is doing some transitional work with Hamill returning to play an older Luke who is struggling to rebuild the Jedi. Trouble with that is how you write out the rest of the core cast, because I don't see Fisher or Ford as part of the plan.
The truth is that the universe is vast enough that they don't REALLY have to tie it directly to the old movies. I think they will at first, but it's a pretty fertile storytelling ground even without Luke, Leia, and Han.
