Never seen the movie, but have been through Happy hundreds of times.

Happy, Texas

I don't remember the name, but there was a movie partially filmed in Plainview. They painted one of the towns water towers with the "town" name.

ROADIE and OUTLAW BLUES, both set in Austin.

And let's not overlook CURSE OF THE SWAMP CREATURE, which has the distinction of being the only movie made in Uncertain, Texas, near Caddo Lake, a town so close to the state line that nobody was sure what state it is in.

Deathproof/Planet Terror
Varsity Blues
Kill Bill
Dusk Till Dawn
Cloak and Dagger (remember that one?)

*I'm going to have to see No Country again to add it to the list. I was "sleepy" the first time I saw it.

Logan's Run

I went to law school across the street from the Water Gardens. I don't know how many times I looked out the window while studying and softly said to myself, "carousel is a lie."

Also, who could forget "The Bear", the Bear Bryant movie starring Gary Busey back in the 80's.....
