Cover week or 2 old eggs by an inch with cold water. Add vinegar and a tsp of salt. Bring to boil. Cover and remove from heat. Wait 13 minutes. Dump eggs into a colander and run cold water over them for 5 minutes. Stick in refrigerator overnight and peel under running water the next day.

And yes, free range (not cage free) eggs are worth it. Egg yolk should be bright orange, not yellow.

This is right. put it in cold water and slightly crack the shell. Cold water goes inside and causes contraction and more clean cracking.

Using an ice bath would mean you would have to send your butler to 7-11 for another bag of ice, and those things are just not done.

Weird way to live. My estate isn't anywhere close to a 7-11.

I my get weekly glacial ice shipments flown in from the arctic. My house staff usually take turns breaking down the large blocks into smaller chunks.

Sometimes I have them melt it down, and then heat it up so I can bathe in it. Just because.

The simple way:

Boil water
Gently place eggs in water (I use a ladle)
8 minutes in the slow boil
Turn off heat and pour the water away
Let the eggs sit for a few minutes in the empty pan
Peel
Perfection

No need for ice and all the running water and added ingredients.

I'm not recanting on the aged egg method I initially described, but I made a batch using Benji Al-Faidegg's youtube method from the video with eggs so fresh I pretty much catchers-mitted them out of a chicken's butt.

Those came out incredibly easy to peel too. Good to know.

I think a lot share that sentiment. Word on the street is that Legalize It was having trouble peeling eggs when he snapped and choked his wife
