I was surprised to find nobody in the OKC area where I live now knew of fried eggs on enchiladas. When I lived in the DFW area, I could always find a great little Mexican food restaurant that would serve fried eggs on enchiladas. I think they had red vinyl/leather seating. Learned to appreciate a fried egg on top of my enchiladas there. I don't remember the name of the restaurant or the old man, and I'm not sure the restaurant is still there. Hope this helps.

The one in Irving? I absolutely LOVE that place. Fantastic food and I was always able to order my fried eggs and enchiladas. Right up near 183 and Beltline if I recall.runontexas said:
