Both are greasy. At least the pork will drain. The beef is greasy but amounts to mush and goo. Lesson learned

I take my Axis to Schott's. I've never had any chorizo made with it, but, may have to give it a schott

I took a whitetail to them for the first time this year, and had them make some chorizo along with pan sausage and dried sausage. Haven't tried the dry sausage yet, but the chorizo is excellent and the pan sausage is very good. My last several before this one were taken to Granzins and I wasn't impressed with their most recent batch.

I've read the packages. Maybe that's the cheap version, but turned me off to it a long time ago.
