Gotcha. But you have it backwards. Everything was marinated in the kitchen by the staff. Sometime around 2004, give or take a year, the chicken transitioned to premartinated by the distributor, but I honestly can't recall on the steak...I think that stayed in house until a year or two later.

Maybe they switched to in-house earlier and went to a different prepped product around '04. I know that when they opened they were using a John Soules product. Pierre thought they could do better. I quit going when they changed the first time.

That's been a long time ago. You prolly remember better than I do. I went in the kitchen twice a week, so we prolly know who each other is.
