I haven't had sushi from too many different places in Texas, but Uchi in Austin has definitely been my favorite.

I'm by no means a sushi connoisseur, but I can't tell a difference b/t the stuff they have at HEB/Kroger and what you get at an actual Japanese restaurant. From what I've seen, it's the same people making it.

I'm not fully Vegan. I still eat primarily plant based, but, will occasionally have fish or seafood. Maybe once a week or so. I'll eat sushi if my company is paying for it, but, I rarely get enough value out of it if I'm paying. 95% of the fish I eat was on the end of my fishing line

When you're eating California, Philadelphia, or Whatever rolls, it's gonna be hard to tell the difference when all you taste is the cream cheese/avocado/filler.

Try sashimi or nigiri where the fish is the main component and you can clearly discern the quality among different restaurants.

Having been to Japan, most sushi isn't good in Texas, nor is it sushi.

If it has jalepeno, cilantro, and a chipotle sauce LOL.

That being said, Dallas at least has some good spots. Tuna and salmon belly nigiri mmmmmm

You haven't tasted fresh sashimi until you've cut a chunk off of a live yellowfin tuna 100 miles offshore and eaten it while it looks at you. Slice it razor thin and break out soy and wasabi powder. Then wash it down with a shot of ice cold Patron straight from the bottle.

I've not personally been to the auction at Tsukiji, but this guide looks really good. https://tokyocheapo.com/entertainment/9-things-you-should-know-before-visiting-the-tsukiji-fish-market-tuna-auction/

They limit it to two groups of 60, so you've got to be there quite early. Because public transit will not be running that early in the morning, they recommend you spend the night somewhere close to Tsukiji. If you want to go the cheap way, look for a manga cafe - you get a semi-private area you can sit to read manga (or in this case, sleep). Otherwise, a business hotel or a love hotel will probably run you around $100~150 bucks for the night.

my two favorite meals ever in Tokyo where breakfast sushi at a little shop in Tsukiji after touring the market. Literally just a bar with about 15 people in there lined up. Omakase.

Also had dinner at a fantastic spot inside the market one night - cannot for the life of me remember the name unfortunately

Not a connoisseur and don't frequent the high-end places, but the J-Bomb at Maru on Burnet in Austin is the best roll I've ever tried.
