I would recommend either Flamingo or Linq. They are both in the middle on the strip. We liked Linq better but would stay at either again.

Stayed at Ceasar's Palace and the Luxor. Both were fine.

Venetian from what you've said

For cheaper get a "go room" at Flamingo for view of fountains/ strip. $5 min tables. central location

Be sure to at least walk through some of the nicer places

Aria/ Cosmo area is a hot spot for younger crowd

Then go to the Venetian/Palazzo. Lots of great places to eat, two casinos in one, and a great sportsbook.
Last time I went I think I ate every meal at Venetian or palazzo.

Oh and if it's in the next week or so, you deal with the National Finals Rodeo crowd. If you are a safe place kind of person, might want to stay away. If not, make a few friends and drink up!

Just got back yesterday...stayed at Bally's and it was good for more of a gambling/drinking/sportsbook trip since it's got good deals on rooms and right in the middle of the strip. If I'm going with my wife, we stay at the Aria for a nicer, more upscale feel. My rooms at Bally's have been pretty nice though, especially for the price, just not as modern as Aria.

And yes there were plenty of cowboys roaming around with the rodeo and George Strait concert.

Also had Hash House for the first time - was very good and yuuuge plate of food.
