If you can find some Dorper sheep meat & Dorper are not wool bearing breed. It's the way to go. It's a meat sheep and has a very mild flavor and tenderness.

Are you talking about the kind that is ground up and shaped into a kebab, or the type that are pieces that are marinated?

I went to a local middle east grocery store and the guy told me for about 1 lbs meat, blend in about 1/4 onion, a tsp or two of salt, some garlic powder, and some American parsley. Shape it on the long flat skewers, let the flavors gel together a bit and then grill.

I think I added a little more salt, just a dash of smoked paprika, as well as some fresh garlic in addition to the garlic powder. Came out good.

I think I also did a 50-50 mix of lean beef and lamb.

I don't really have a recipe; I just grab stuff from the pantry. It's usually olive oil, salt and pepper, a little cumin, a hefty dose of dried oregano, chopped garlic, the juice and zest of a lemon, and some sumac if you have it.

You should get a copy of Steve Raichlen's BBQ Bible

Here's a recipe for lamb kabobs from it: https://barbecuebible.com/recipe/saffron-lemon-shish-kebabs/

You're welcome Steve Raichlen has some great lamb recipes. The first one I tried was a rack of lamb a coworker made from one of the recipes from that book. After that, I had to have a copy of the book for myself.
