It's that wonderful time of year. I grew up in El Paso so spent a lot of time in New Mexico growing up

Picked up 6 pounds at central market. Going through and dicing them all up and tossing into an ice cube tray that I will later bag

How do you like to use them, my go to is a burger topping or omelettes

Hosting some neighbors tonight and going to try some green beans cooked in beef stock, shallots, bacon, and throwing in a couple chilies in the mix

First batch of green chile stew in '26. Can't get it at Chuy's anymore. Best item on the green chili festival menu in the past.

My favorite uses for Hatch green chiles: green chile cheeseburger, green chile queso blanco (usually add brisket), mac and cheese (with brisket and crispy jalapenos), green chile pork stew. What else am I missing?

Love to add roasted hatch to any of these:

Cornbread
Biscuits
Meatloaf
Scrambled Eggs/Omelets
Grilled Cheese
Pasta Salad
Corn Chowder
Grits
Chimichurri

I don't get the hatch chile thing. I feel like HEB just made them up to try and get me to buy weird stuff.

Well considering I lived in El Paso and spent a lot of time in New Mexico, whataburger and other chains regularly had hatch as an option. The state question of New Mexico is Red or Green? It is a big part of the culture of the region. So I can at least say I wasn't bought in by HEB hype, I just benefit from it now that I am in Dallas

Not just HEB, but when I lived in Austin, Chuy's always had a Hatch Fest with special menu items for a limited time when it was green chile season.

New Mexico hatch chile based mexican food has ruined most other tex mex for me. I still like tex mex and eat it regularly, but knowing there is something better out there is never far from my mind.

Red is fine but green wins hands-down. I'm not a huge fan of the Christmas style.

If you are near Plano, Mi Dia is New Mex Mex. They use green chilis for their sauce that goes with the Tampiquena.

Best salsa I have found in the metroplex

I am in Bastrop, so the newly opened Chuys is as close as I get. I did grow my own green chiles in the garden this year for the first time and have been making some homemade green chile chicken enchiladas and other stuff.

I typically get a couple pounds every year. I'll make pork green chili stew and then divide the rest into 1 Oz portions that I freeze and use for things like burgers and hot dogs.

Ah, yes. The yearly reminder of how lame Whataburger is for not bringing the green chile double back to this part of Texas.

Picked up 3 lbs of Hatch at HEB last night along with the breakfast sausage and chorizo.

Honest question from someone who will eat stuff with green chiles on occasion, but is not a fanatic:

What is it about Hatch chiles that distinguishes them from other green chiles? If I prepared two identical dishes, one with Hatch and the other with regular green Chiles, would y'all be able to tell me which is which?

Hatch vs Anaheim are similar but Anaheim are more sweet while hatch has a milder sweetness but also more smoky flavor. Hatch tops out on the Scoville scale several times hotter than an Anaheim.

If I didn't have hatch on hand an Anaheim works but I would probably just buy a can of hatch just for my personal preference

Anaheim actually are seeds from hatch to my understanding but the climate in California is just different enough to lead to the differences

We have at least five green chili heavy cookbooks from before the internet. My favorite is green chili lobster enchiladas (we usually substitute shrimp). It's the green chili pine nut sauce that makes the enchiladas. There are too many great recipes to mention.

Just having green chili sauce to pour over anything is good enough.

Most people would never be able to tell the difference. If you made some green chili stew with Anaheim and threw in a couple of roasted jalapenos, it would be almost identical to a green chili stew made with Hatch. It's a fad like the chipotle fad from 15-20 years ago. Not saying it isn't good, I buy a couple pounds each year myself, but it's definitely overhyped.

To me, the difference is that hatch green chiles have a slower burn than anything made with jalapenos. You can get the same level of heat by mixing anaheims and smoked jalapenos, but you will taste that burn on the tongue while you eat it, whereas the hatch burn starts at the back of the mouth and moves into the sinuses without ever burning out and deadening the rest of the tongue the way jalapenos do.

Bought a cylinder roaster this year and have roasted 20# so far. Have 25 more coming from Hatch this week. Fun to roast, great aroma, and enjoy Hatch throughout the year and giving to friends.

My ideal plate would be stacked enchiladas & a Tex-Mex taco w/ rice and beans. NM especially sucks at beans

a great burger alternative:
grill up some chicken breasts
just before they are done, cover with hatch chiles and your favorite melty cheese (we use provolone)
spread some spicy mustard on a toasted bun
build to preference
serve with some tater tots
