If you could start over from scratch, what would you buy? What are your workhorses in the kitchen?

I'm needing a saucier and frying pan. Looking at getting 2-3 quart saucier and maybe 12 inch frying pan to avoid crowding. Any thoughts?

We have mostly all clad which I like a lot, but our 12 inch skillet is Hestan nanobond and it's my favorite

Frying definitely cast iron.

I've slowly been changing older stuff (very old magnalite and various non stick pans) to Made In stainless. I have a small carbon steel pan that had been a work in progress to get seasoned correctly.

So far I have no complaints.

My cookware consists of:

2 Made In stainless steel saute pans
2 cast iron pans: one old Wagner from the 40s and one Lodge that's about 20 years old.
Lodge Dutch oven
2 cheap non stick pans
2 sauciers and 1 stock pot, both Made In
Bean pot and Comal, both from Masienda.

I absolutely love everything I've bought from Made In.

The workhorses are 12-inch and 10-inch carbon steel pans; 3.5-quart stainless saute pan; 12-inch stainless frying pan; and 3-quart saucier.

I have a couple of other Made In pieces but those are the ones I use the most.

Do most of you guys recommend 12 inch frying pan over a 10 inch? Im thinking it will help prevent overcrowding/steaming items by having more area to work with.

Choosing only one, I'd go 12. Ideally, both. Or an 8 inch and 12 inch. Sometimes you need the bigger one, sometimes it's too big

I started with a 10 piece set from All-Clad and added a 14" fry pan. Along the way bought a couple of 10" De Buyer carbon steel pans. I also use a 12" Smithey cast iron and a La Cruset Dutch oven. I use the Smithey more than anything to the point I leave it on the range now instead of putting it up. For non-stick I just use Ace-mart and replace as needed and was gifted a green pan professional series that is eggceptional for cooking eggs.

Made-in and Misen weren't around when I was gearing up, but those are 2 brands I'd definitely consider if I was starting today

I just came back from a business trip in Australia with this bad boy. From South Africa - enameled cast iron potjie pot. Saw Zimmern using it on his newish outdoor cooking show and we had to have one. We have a regular one from when we lived in Africa but this one will be so much easier to use and clean. Anything you'd cook in a Dutch oven or crock pot can be cooked in it over wood fire or gas. Been hunting for it for months because I couldn't find it for sale in the US.

I've had the same core set of All-Clad for almost 25 years now and still looks new. Have added other all-clad pieces since then. Combine that with some cast iron and whatever decent non-stick I can find at homegoods

This is me. Bought a set of All Clad in 2000 (thanks product placement on Emeril Live!) and they're still going strong. No regerts.

And we have Misen pots and pans at the family lakehouse. For the price, I've been very happy with them.

I don't get the point of Hexclad other than to be a multitool or spork version of a pan. If you don't have space I get it, but if you do you might as well get the right pans/pots for the job.

We've had all clad stainless pans that have been our daily users for 13+ years now.

So hard to say I'd look at anything else. That said, we love our made in carbon steel pan so if buying now, I'd definitely give their stainless a look. Also use our lodge cast iron regularly.

I'll tell you what I won't buy again (well I didn't buy it, the wife did). Our place. That pan was overpriced hot garbage.

Just go get a cheap blue-handled pan from AceMart for them to use when they visit. If they destroy it, you're not out much.

My mother in law cooked on an electric range forever and always on high. No matter what, it's on high. She tried the same with one of my alclad skillets on our induction range and it literally warped it so bad it was unusable.

I waited about a year before getting them. Got them on the black friday deal and do not regret it. Biggest thing is using a lower cook temp on the stove. They heat up fast and maintain heat. That link should get $100 off.

I got mine on sale, probably worth watching for. Great pan and looks really cool too. I'd like more of them but can't really justify it with already having perfectly good all clad in the other sizes

Same here. Can't justify it at the moment with all of the other great stuff I have. My daily use pans are All Clad D3, a Made in carbon steel, and a Le Creuset dutch oven.

I recently bought the 12 inch, it is great and has become more nonstick with use. It has replaced my cast iron frying pan

Made In has a lifetime warranty. Try that first before buying a new one.

Agreed on checking with Made In. I chipped the finish on an enamel nonstick, and they replaced it with no hassle.

For pans, I have way more than anyone should have. I have a set of Cuisinart stainless cookware that I got as a wedding gift almost 19 years ago, and several cast iron skillets in a variety of sizes that I've picked up when cleaning out my grandparents' and dad's houses after they passed away, four Made In nonstick pans, a cast iron Dutch oven, an enameled Dutch oven, and a carbon steel paella pan from Made In that gets more use searing than making paella. If I was starting over, I'd probably buy an enamel nonstick set from Made In, a carbon steel frying pan, a heavy stockpot, and a nice enamel Dutch oven, and call it a day.

I've got an All-Clad skillet that has warped (likely due to my fault) that I have debated about taking a piece of railroad rail and a sledge hammer and going to town on it to see if I can flatten it.
