Howdy F & S'ers. In the past have always seasoned my Prime Rib with Herbs de Provence as well as S & P, of course. This year looking for something different. What do y'all suggest for a Prime, Doing on a Green Egg at 300. What say you?

I typically salt a day ahead and refrigerate uncovered. Then garlic/salt/pepper. Also I'm a fan of the low and slow then high heat method for uniform medium rare

I'll second this. I like to serve it with some large flake crunchy salt so the inside is seasoned as well.
