Aynone have a good recipe for lengua?

My folks have livestock and I was able to stock up on beef. I do enjoy a good lengua taco but have no idea how to prepare it.

Does anyone have a good recipe or tips on how to prepare it? Thanks!

I did this with deer tongue and it turned out good. Just boil it for a few hours with some chopped up onion, garlic, salt and pepper. Then youll be able to skin the tongue by cutting it and peeling it away. Then you can slice up the muscle part and then sear it in some oil and I put a little sprinkle of salt on after.

Never done lengua but this is how I prepare barbacoa and it's great.

I'd recommend adding the cheeks. They bring the delicious fat to the party.

Yeah I would just add the cheeks. Either source it from the same beef or pick some up at HEB.

Awhile back our HEB had some cheeks mismarked as tripas .........I stocked up on cheeks for about $2 /lb
