A buddy shot a deer and gave me a bunch of venison. I am quite excited about the experiments I will do with it. My first project is making venison gumbo. Slightly burning the ingredients creates a nice smoky flavor.

The gumbo was stunningly delicious. I put the meat in a pressure cooker, then cubed them. Today I am experimenting with baking soda. Then I will make teriyaki jerky and Irish stew.

It only took me a year to figure out this place is nuts!

Yeah, I use it quite a bit to velvet venison before stir frying.

I made an Irish Venison Stew which was pretty good. The secret ingredients are Worcestershire Sauce, dark beer, and red wine with a hint of nutmeg. I have yet to try the venison teriyaki jerky. I think I might try to make pepper steak with venison. That should be interesting.

It's very hard to go wrong with a Teriyaki sauce venison jerky. Add some black pepper, garlic powder, and red pepper flakes. Go get it!

Check out Buck, Buck, Moose. Lots of good venison recipes in that book. Should give you some different ideas about how to use the meat.
