Rice pie ?????? And it's only frito pie if you add the chili to the small bag of fritos........lived on that for lunch in high school back in the 60's

I made a concoction the other day that started out as Mexican rice but I used tomatoes, onion, poblano peppers and jalapenos in it and also added a cup or so of kernel corn and a generous bunch of barbacoa. Put fritos in a bowl, covered with the rice/meat mixture, added some black beans on top, Mexican blend cheese, my favorite salsa and some chopped cilantro. I don't have a clue what you'd call it but it was dadgum good and will make again.

I was raised that way too. Gulf coast Texas in the middle of the rice belt plus half conass family means rice was involved in most meals in one form or another.

But we didn't cook the rice in the chili, and we weren't commies and yankees that put beans in our chili either. Whatever filler is up to you - rice, fritos, beans, no filler, corn, etc. Just don't cook that stuff in the chili.

And you dorks that couldn't figure out that my comment earlier about chili being chili and stew being stew was facetious need to take a deep breath and realize that a whole lot of things said are said in jest, especially with the commie and yankee attached to it.

I have enough coon ass family from Welch to put my chili over rice, but not enough deep coon ass to put tater salad in my gumbo.

No one will ever convince me that beans weren't in chili on trail rides.

I like beans in my chili. But I do know how to make competition chili.

Same.

The potato salad is a new(er) one to me - probably heard of it the first time 10 or so years ago. I asked my grandmother about it once and she said she had heard of it, but it was kind of a Lafyette thing. Seems to be more popular these days though.

I can't see that being a combination of flavors that I would like. Separately they would be great, but not combined.

So you can't have a standard today because some of the chili queens of San Antonio may have used questionable meat at one time and beans must be allowed because chuck wagon cooks needed to make food go further with meat in short supply. Y'all be sure to reach out to CASI and let their leadership know how wrong they are

Wouldn't do any good. I hear they are a bunch of A&M grads so you might as well beat your head against a brick wall. You'd get better results..........

As someone who has won chili comps half a dozen times, I have no issue whatsoever saying that competitive cooking is ass.

Don't call something "authentic" if you're going to ignore the history of the dish. Call it "what we like" and get on with it.

One of my favorite chili recipes and very easy to make. Calls for beans, but I don't always add the beans.

Turkey and Hot Sausage Chili | Emerils.com

I guess you could replace the ground turkey with ground beef if you think chili must be made from beef. I've never tried it with beef.
