There was a time where all I could afford was basically eggs as far as protein goes. After those months, it's been very difficult to deal with them ever since.

Had some difficulties but overall a solid dish. My poblanos were small, could have used a couple more. Also forgot to beat the egg whites first but soldiered on. Used about 60/40 mozzarella to pepper jack for the cheese, also added sliced mushrooms. Didn't bother with the fried tortilla either because I wanted a runny sauce.

Just read first post before pics again. Shredded chicken and ?Monterrey Jack?

What cheeses are people using for this. Someone said 60 mozzarella/20 pepper Jack

I used mozzarella and pepper jack because i had half a block of mozzarella that I needed to use up and the video suggested 20 ounces of cheese so that plus 1 more block of mozzarella and 1 block of pepper jack = 20 ounces

I used Monterey Jack and Queso fresca . No reason some shredded chicken or ground beef couldn't be put in there.

I wasn't in the mood to go hunting for Oaxaca but I don't think you'll be disappointed with mozz/jack (pepper or regular)

I made Chile Relleno for the first time ever last week, and made a thread with the recipe. It was super good.

Someone recommended this casserole recipe as a less labor intensive way, and I made it tonight. It was good, but in a different way. I wouldn't want it for dinner, but it would make an outstanding breakfast casserole.

Very good recipe, but frying that pepper and batter in oil hits the spot.

Made it the other day and added shredded chicken. Pretty good eatin.

I going to make a batch of her ranchero and take it with my usual salsas as a "warm salsa" alternative.
