I've got a Food Saver vacuum sealer that I'm about ready to ditch. It's on it's last leg and it's big and bulky and I'm about ready to swap it out.

Any recs for a decent replacement?

I don't wanna spend the money for a big commercial grade chamber sealer but a good unit that works well for both freezer storage and sous vide.

I have the Anova chamber sealer. I'm happy with it. My biggest beef is there's no option to just seal. Otherwise I'm very happy to have gone with a chamber style this time.

Currently 299 and I bet there will be a bigger sale soon.

I have really like my Weston Pro 2300. Had it about 5 years now and have used it pretty heavily. It seals well, even with wet foods like fish. Had to replace the heating element this year, but that was quick and easy.

Go to webrestaurantstore.com. VAC-PAK IT brand. They have different sized vacuum chamber machines. This is commercial grade stuff. But, you can vacuum pack anything that will fit in the chamber. Because it is a chamber, you do not have a differential in pressure on outside of back vs. inside of bag. So, you can easily vacuum seal foods that "wet" without it getting pushed out of the bag like with food saver. And, the bags are WAY cheaper than FoodSaver bags. I've had one for five years, use the hell out of it, and it is one of the best things I've ever purchased. Caveat: Is big and VERY heavy.

I guess my question to the OP is what do you consider "big and bulky"? My ~16 year old Food Saver is still going strong and it sits on one of the counters all the time. I don't consider it big or bulky but everybody's opinion is different. I think mine is something like a V2860 model or similar.

I also have little issue sealing liquids in bags. Took a couple of tries to figure out how to do it but it is easy and quick now.
