This is a cross post from a thread on the OB. Figured there's some here that wouldn't get over there often.

I made a huge batch of boudin this spring and am trying to go through it. So I tried something I scrolled past on the internet, deboning and stuffing whole chicken wings.

Not gonna sugar coat it, deboning whole chicken wings is a tedious pain in the butt.

But I got the hang of it after the the second or third. Stuffing them wasn't too bad but was a little tedious. The next time I make a batch of boudin I'll be ready to use my stuffer for piles of this kind of thing rather than links.

Results were outstanding. Only improvement is a better considered technique for achieving a nice crisp to the chicken skin. The lone survivor reheated in the toaster oven even better for lunch today.

Nice! Emeril's Ms Hays stuffed wings were fantastic. Basically Vietnamese eggroll stuffing in a boneless wing.

His restaurant NOLA, open for 30 years, was another covidiot casualty

Cool, didn't know he had offered that. I stumbled across someone on Instagram stuffing a boneless wing like this and knew I had too much boudin on hand not to do this. Looking around the internet before I cooked these, Vietnamese versions were everywhere but most only deboned the flat with the tip attached and kept the drum for something else.

My dry rub on these is homemade Emeril's creole essence off his website. It's been my Cajun/creole rub and seasoning for years.

Looks awesome. I make a lot of boudin and have deboned whole chickens and tied up then smoked and they were great. I'll have to give this a try.

Brother, have no problem deboning birds. Dove, quail, even parts of chickens. Deboning a chicken wing.... kudos to you. That would be an exercise in patience!

This is kinda like the stuffed turkey wings at Laura II in Lafayette. Top 5 meal of my lifetime. If you're in Acadiana it's worth the stop.

If I recall correctly, the stuffed turkey wings aren't every day and they don't (or at least didn't do) dinner hours, so I'd check before you roll in there. Having said that, anything at Laura II is gonna be great.

I'm going to try some turkey wings. I have a few portions in the freezer to start.

I have a ton of this boudin. What else should I stuff? Jalapeno poppers and a try at some corn dogs are on my list so far.

I had butcher stuff a venison blackstrap with boudin one time, was really good. Stuff some big 'ol bone in pork chops?

Pork loin the wrapped with bacon is a friends/family favorite. Cheap too.

I actually just rolled my first proper egg rolls last week. Need to make more and the boudin had crossed my mind.

Maybe a scotch egg, too.
