Was thinking about just ordering Rudy's but am now considering tacos. If we wind up cooking ourselves any insight as to how many eggs and sausage I would need? I'd also probably just get one of those big ass things of shredded cheese as well.

1/4 lb of sausage per taco = 25 lbs sausage
not sure what to recommend for cheese amounts
4 big containers of HEB salsa in produce isle

I love a good chorizo/egg/potato breakfast burrito. Dice up some onion and cook it with the chorizo and it heaven.
