So you "read" their food was bad…..and now wondering how they are having this success? They opened their first restaurant in 1982 and expanded like crazy.
I have eaten at Chuys in Atlanta, GA with my BIL.

I enjoy a couple of locations of Chuys. Barton Springs and 183 at Duval. Like both of them. Other locations are sterile.

We used to hang out in the pit at Chuy's #1 after work. Chuy's sold out to PE a long time ago and then went public. Doubt this sale to Darden changes much. Covid really did a number on them.

Chuy's #2 on N Lamar has always been my favorite of them all. Their food also seems to be slightly better than the others.
I've been to Chuy's #1 on Barton Springs, Round Rock, College Station and a couple of others. I love the atmosphere and vibe of #2. I wish they still had all their vintage lava lamps, I loved that.

You aren't kidding. They were much better before.

As a native Austinite I can honestly say it's never been my favorite. I won't turn it down if it's offered at a catered business lunch but there's other Mexican/Tex-Mex that I'm going to before I give them my hard earned dollars. I'd take Matt's, Polvos, even Lupe Tortilla over Chuy's. With this recent move I consider them no different than a Tex-Mex Chili's at this point.

Their menu was greatly reduced after Covid.

It's been like that since Covid and I wish they would take things back to the way they were in the 90s
