I've done this recipe before and it turned out well. Most of the recipes on the net are very similar.

This. Riff off it however you want, but this is a great to start (and end if you prefer). Use whatever spices you want but I definitely put spices in it.

Third on the Meat Church recipe. Also, his smoked carnitas recipe is one of the best tacos I've eaten in my life.

If you haven't smoked pork belly burnt ends either it is a must. Lots of recipes out there for them and all mostly similar. I took them to a neighborhood block party and folks were slobberin all over them.

This is the way. Add a 1/4 cup of milk, a 1/4 cup of beer, and sprinkle a little meat church fajita on top before smoking and you are living right.

I just realized I actually don't use the Meatchurch recipe at all. I just read it originally to get an idea of what is done.

  • 8oz white american from the deli - I just get a 1/2" block then cube it
  • 4 oz cheddar or jack (or 4 oz each - whatever)
  • 4 oz cream cheese
  • 1/2 can cream of mushroom or cream of jalapeno
  • 1 jar of fire roasted salsa
  • 1 small can diced green chilis
  • 1 1/4 cup diced cilantro
  • 1 cup cooked chorizo
  • 1 cup half and half or heavy cream
  • Spice to taste

What kind of rolling papers do you use to smoke your queso? Every one I tried breaks apart when you pour the cheese on it.
