Pick a recipe. Use half venison chili grind and half cubed sirloin or tri-tip. Make sure you are using dried rehydrated chiles and a bottle of Shiner Bock.

No matter what you do with any chili (meat stew with beans is not included here) - use a coarse grind and not hamburger grind.

Also, instead of using 100% ground meat, get a tri-tip or a chuck roast and cube it into 1/2" or 3/4" cubes at roughly a 50/50 ratio. Add some smoked brisket or chuck roast that has been cubed as well - absolute game changer.
