FYI: Gumbo freezes great. I usually put up around 20 containers worth in some small pyrex bowls with a small amount of rice in the bottom for ready to eat meals (use less rice than you normally would since it puffs up some more when re-heated).

Making a pot this afternoon......dark meat chicken, sausage and tasso. Miz R has some chicken breasts out to cook for her since she doesn't care for gumbo........I might just steal one and put it in the gOmbo just to be contrary and start a stink up in here........also gonna make some jalapeno shut up puppies to go with the gumbo.
