Seed company goofed, and I got some butternut squash seeds in with my yellow. They've grown well, even after the yellow got cold damage. What recipes do you use to prepare these fall survivors?

I grabbed one by mistake, thinking I was grabbing a spaghetti squash. I cooked it like a spaghetti squash and when I used a fork to scoop, realized my mistake. I have to admit, it tasted very good so we saved it for some steaks tonight!

Prepare it like you would sweet potato. Peel it, cube it, toss it with olive oil, salt and pepper, and roast it.

I make soup with it. Cook it with some chicken stock and herbs, add a bit of butter and cream and pure with a stick blender. Add some finely cubed ham and eat with fresh baked sourdough.

I usually split them along the stem, take out the seeds, trim enough of the rind opposing the cut side to make them stand well in a sheet pan. Roast in the oven.

Similar to birddog, I've made a soup with carrot and butternut squash that turned out well. Similar to this:

Butternut squash ravioli with brown butter sage sauce and grilled Italian sausage. You can cheat and use pot sticker dough if you don't want to roll out the pasta

I love it cut into cubes, tossed in fat and salt and roasted at 425 until brown on edges. Stir halfway through.

Cut it in half, scoop out the seeds and bake with a little brown sugar and real maple syrup in the seed cavity. Buddy from Vermont showed us how to do this and it is great.
