A friend of mine was telling me about Tyson's tacos in Austin and they had one that was called balls of glory. Inside the taco were too deep fried egg yolks. So I started doing some research about how to deep fry egg yolks.

Do any of you do this, and what is your go to recipe? This sounds incredible a Panko crusted egg yolk. From what I understand you rolled the egg yolk in Panko crumbs and it doesn't break and then you freeze them before frying? Some other methods for using the sous vide. Let me know what you do?

Never heard of this. What if you took the frozen panko crusted egg yolks and covered them with breakfast sausage? Scotch balls of glory?

If you added some cheese between the sausage and panko, could that be a Scotch Kolach?

Take it up to 4 egg yolks.

The first thing that comes to mind for me is perhaps they are frying cured egg yolks. Basically you lay the yolks on a bed of salt and put them in the fridge for a while until they're firm. I believe there's other ways to cure them like soaking in soy sauce. Or they're just freezing them, but I would think an egg yolk that isn't cured would have a real tough time staying together as it heats up.

Yes one method is freeze first
Another is to sous vide a whole egg the peel off the white before crusting and the yolk is still soft

I am REALLY sure I will NOT be trying this, kinda, sorta does not sound good to me. Is it just me or anyone else taking a hard pass?

Sounds delicious and messy. I'd love to try it, but not sure I'm up for trying to cook it without a good tutorial
