I've made this recipe twice now and the pot has been emptied each time. I will be making a pot of it for Thanksgiving.

We make this News Years day but we season it with a smoked turkey wing then discard it. That and a bean soup get the year going.

If you have a PBS membership search Dooky Chase Holy Thursday and they walk through their gumbo z'herbes. I've got the episode saved but was waiting for Holy Week.

Use the same process except using collard, turnip and mustard greens with smoked ham hocks, andouille, and home made tasso. Also add a chopped fresh tomato towards the end. I like it too much

Made this today. Great recipe! Mrs Ledbetter loved it. I never thought that smoked turkey drumstick would taste that good. That recipe is really good and also wide open for interpretation.

I made a version Saturday I call greens and beans. Half a bag of triple greens from HEB, a cup of the 13 bean soup concoction from the HEB cooked ahead of time, andouille sausage, smoked ham hocks, homemade tasso, chopped onion, green and red bell pepers, celery, chopped maters, roux, spices.......some rice on the side. Pretty good stuff

Made the version in the OP today. Still has about 15 minutes to cook but based on my early tasting spoons....i burnt the roux.

F. Me. It looked gorgeous, sexual chocolate brown, and I kept it on heat about 30/60 seconds too long.

I might get lucky and in 30 minutes it is awesome, but I'm pretty sure the bitter test tasting isn't due to the greens.

Great bump as I missed it the first time. Headed to Husband's parents for Thanksgiving & been trying to think of something to take or an easy prep there. This might be it - they love greens.
